The short rib is a very tasty and tender cut from the front of the rib, close to the center of the chuck. Increasingly popular, it is ideal for cooking on the grill over high heat. The fat between the fibers makes it perfect for barbecuing, where it’s often the star. When seasoned only with coarse salt, its flavor and texture are enhanced. It can also be used in slow cooking preparations and served with polenta, puree or oven-baked vegetables.
