In Italian, ossobuco literally means “bone with a hole”, due to the bone with marrow located in its center. It is usually prepared slowly and conferes a special flavor to sauces and stews. In most recipes, ossobuco is sprinkled with flour and fried in butter, oil or fat before being cooked.
