Cut from the shoulder, the flat iron is surprisingly tender and tasty. In the center of the piece, there is a membrane called the fascia that must be removed before preparation. The cut, which is ideally prepared medium to medium-rare, has good marbling and exemplifies the growing interest of Brazilians in cuts from the forequarter.
