Considered the “queen of barbecue grills” in Brazil, the cube roll cover is the most succulent and tender among the typical Brazilian cuts of rib. It is located between the forequarter and the back quarter of the ox and can be packaged with or without the matambre, an easily identifiable pink part that must be removed before cooking. It must be prepared slowly, away from the brazier, in order for the fibers to soften.
