The chuck roll is a large cut of the chuck located between the rib and the spine. For a long time, it was used almost exclusively in the minced form, especially in hamburgers due of its excellent flavor and fat content. With the growing interest in forequarter cuts and the characteristic tenderness of meat from Angus animals, the chuck roll has been used in many ways, including as steak, roast and stew.
