The unusual name of this cut may confuse some, but it is a delicious option for barbecuing. Excellent for snacking and known in Brazil as “barbecue peanuts”, it is tasty and has a beautiful layer of fat that guarantees a lot of tenderness. It is taken from the region located between the rib bones and can be prepared on the grill over high heat. The cooking must be quick so as not to lose its tenderness. Longer cooking times in the pan are possible, though.
